Gang Greens
- 5 Spears Asparagus, chopped
- 1/2 Cup Fresh Spinach
- 1/2 Cup Brussel Sprouts, halved
- 2 Large Crimini Mushrooms, sliced
- 3 White Mushrooms, sliced
- 1/4 White Onion, diced
- 1 Clove Garlic, minced
- 1 Tsp Green Chile Powder
- Salt and Pepper, to taste
- 1 Tbs Olive Oil
- Saute garlic, onion, and mushrooms in olive oil until fragrant
- Add asparagus and brussel sprouts, cooking until asparagus is bright green and you can spear all veggies with a fork
- Add spinach and spices, cooking until spinach just begins to wilt
- Serve with tofu or tempeh for a fab meal
